原标题：柳州螺蛳粉为广西特产，真正正宗的螺蛳粉又是什么样的？
不同地域都有不同的店铺是正宗的，最正宗的当然是柳州本土的螺蛳粉了，但是却也没用，正宗的柳州本土的螺蛳粉，也是不一定吃得惯的，地方小吃的发展，还是得以地方的调味才能开下去，一味的追求正宗，反而生意不好。
柳州的螺蛳粉，是有螺的，有田螺在里面，而不是单纯的用调料调出来的汤底。在外面吃的螺蛳粉里，都基本上是没有螺的，就算有螺，也不是那种新鲜现煮的螺，而是一直煮在那里的螺，虽然更入味，但是却多了很多其它不属于螺蛳本身的味道。放在粉里面直接煮，就少了那种鲜。
另外，其实螺蛳粉要用粗粉或濑粉煮，要比外面很多种细粉煮要好吃。我之前一直以为细才是螺蛳粉的真正正宗，但是在吃过一次粗粉的螺蛳粉之后，发现那种口味，是真正的从汤汁到粉的鲜，特别是有螺蛳的情况下，粗粉能把汤汁里面的所有鲜味吸收到粉里，但是它又不像面那样，一泡就糊，那种粉能够吸收汤汁的味道，吃起来要更过瘾。
因为粗粉吸收之后，它不是细粉的那种脆，而是有一种韧劲，这种韧劲让粉耐嚼，并且吸收汤汁之后，咬粉的味道不仅仅只是停留在表面，而是满口都是那种味道，特别是混着酸笋吃的时候，要更加清爽。
另外，柳州的酸笋所用的不同其他地方做的酸笋，用料上用的是细笋，柳州的酸笋材料有两种，一种是牛角笋，另一种是大头笋，这两种笋都比较大，它用来腌酸笋是上上之选，这也就是有些广西开的店比其他人要好吃的原因，就因为酸笋的问题。返回搜狐，查看更多
